Keto Cheese Crackers: Cuisine HELP

This is an extremely simple recipe, with only four ingredients!

As you move to a low-carbohydrate or ketogenic diet, it means some foods are mostly off-limits, such as those on the Red List.

Other dishes can be adapted by substituting ingredients to make them keto-friendly. Lisa and I have enjoyed many of these, and with this post I'm starting a series that will highlight some of our favorites.

When we make low-carb foods (and by "we" I mean it's mostly Lisa), we first judge for ourselves whether we would like to have them again, and then we offer the leftovers to our daughter Rebekah and her family for evaluation.

She has three boys four and under. If they like a dish or side, we can feel pretty confident in offering it to dinner guests who may not be accustomed to keto eating.

Sometimes the verdict is, "that's not too bad for keto, but it's not as good as the real thing."

These crackers are way beyond just OK!

How Lisa Makes It

Cheddar and Pepper Jack are our favorites, but Lisa has also uses Gouda, Mozzarella and Parmesan. It's important to grate the cheese instead of buying pre-shredded bags, because those typically have some sort of starch added to prevent caking. We don't want starch!

After the crackers have cooled Lisa puts them in baggies. You can either store the crackers on the counter or in the refrigerator. We have not found it necessary to refrigerate because these are so good there is almost no way they last long enough to spoil at room temperature.

You may want to experiment with different oven temperatures and baking times, and you also can decide how particular you will be in your scoring of the crackers. Lisa originally used the rounded end of a beater to make an indentation in each cracker to make it look like a CHEEZ-IT. She later decided it wasn't worth the time do do that.

Ingredients

  • 125 g Almond Flour
  • 105 g Cheese (shredded)
  • 1 tsp Garlic Powder
  • Salt

Preparation

Before you start, gather the following equipment and supplies:

  • Food scale
  • Parchment paper
  • Cheese grater
  • Sifter
  • Rolling pin
  • Microwave-safe bowl
  • Pizza cutter or pastry cutter
  • Spatula
  • Sheet pan(s)
  • Baggies

Step-By-Step Instructions

Prep: 10 minutes | Cook: 12 minutes | Servings: 4

  1. Preheat oven to 375 degrees.
  2. Take a block of cheese and grate it.
  3. Weigh out 125 grams of almond flour, add the garlic powder to the top, and sift these dry ingredients into the mixing bowl.
  4. Weigh out 105 grams of cheese, dump it into the bowl and stir briefly to mix. Then put in the microwave for 90 seconds.
  5. Stir the heated mixture with circular motions and gather into a ball, kneading together.
  6. Roll out between two sheets of parchment paper. Lisa demonstrates in the video how to roll from different directions to make it rectangular and reasonably uniform.
  7. Remove the top sheet of parchment paper, sprinkle with salt and any other seasonings (we've used Everything Bagel seasoning), and then use the pizza or pastry cutter to slice the rolled-out dough into rectangles.
  8. Place the piece of parchment paper with the cut out crackers on the sheet pan.
  9. Place in the oven and bake for 12 minutes.
