Keto Pizza: Cuisine HELP

No need to say goodbye to family pizza night!

For years I've been making homemade pizza for my family every Friday evening. My five children look forward with eager expectation to eating pizza and watching a movie together. When my husband and I started limiting our carbs several years ago, we thought our days of enjoying pizza night with the kids was a thing of the past. Then I came across this keto-friendly pizza crust recipe. It's not quite the same as regular crust, but is a surprisingly tasty vehicle for all the yummy pizza toppings and gooey mozzarella cheese. I usually still make regular pizza for my kids, but last week I asked my 12-year-old son to taste this low carb pizza. His response was, "Not bad! Tastes like pizza!"

The link above includes two ways to make the crust: one with almond flour and one with coconut flour. Our family prefers the almond flour version.

Ingredients and Supplies

  • 1 1/2 cups mozzarella cheese (shredded)
  • 2 TBSP cream cheese
  • 1 egg (beaten)
  • 3/4 cup blanched almond flour
  • Pizza sauce (look for one with no added sugar)
  • Low carb toppings of choice: extra mozzarella, pepperoni, sausage, bacon, olives, veggies, etc.
  • Parchment paper
  • Pizza stone or pan

Step-by-Step Instructions:

Prep: 10 minutes | Cook: 20 minutes | Servings: 6

  1. Preheat oven to 425 degrees and line pizza stone or pan with parchment paper.
  2. Mix almond flour and egg in a medium sized bowl.
  3. Mix shredded mozzarella and cream cheese in a microwave safe bowl. Microwave for 90 seconds, stirring halfway through. Stir again at the end of 90 seconds.
  4. Combine the melted cheese with the flour and egg mixture. I find it works best to knead with my hands but you can also use a food processor. If the cheese starts to harden, you can microwave the mixture for another 10-15 seconds to soften it.
  5. Spread the dough onto the lined pan. Use either your fingers or a rolling pin over an additional sheet of parchment paper to roll out the dough. Aim for 1/4-1/3 inch thickness and a diameter of 12-14 inches.
  6. Use a fork to poke holes in the crust to avoid bubbling. Bake for 6 minutes.
  7. Poke any bubbles that have formed and then bake another 3-7 minutes until lightly golden.
  8. Take crust out of the oven and top with pizza sauce, toppings of choice, and additional mozzarella.
  9. Return to the oven and bake for about 10 more minutes.
  10. Take out of oven, slice, and enjoy. We like sprinkling some grated parmesan cheese on top and serving with a nice green salad.
