Cuisine HELP: Egg Roll in a Bowl
A quick and easy keto meal!

This simple meal, consisting of just a few ingredients, is a great choice for a weeknight meal. I shared this recipe with my brother and sister-in-law last year and it quickly became one of their go-to meals after a busy day at work. My sister-in-law Amy said, "I'm not a super confident cook, so this is a great recipe for me. It's tasty and easy enough that I can make it every week without much preparation."
This is the kind of recipe that makes healthy eating easy and affordable. Try topping with some roasted peanuts and extra sriracha for added crunch and flavor.
Here is the original recipe.
How I make it
Both ground pork and ground beef taste great in this recipe, so use whatever you have. Personally, I use half a head of cabbage and cut it up finely. You can also grab a bag of coleslaw mix.
Ingredients and Supplies
- 1 pound (16 ounces) ground pork or beef
- 2 tsp minced garlic
- 14 ounces shredded cabbage or coleslaw mix
- 1/4 cup low sodium soy sauce
- 1 tsp ground ginger
- 1 whole egg
- 2 tsp sriracha (plus more for topping)
- 1 TBSP toasted sesame oil
- 3 sliced green onions
- Roasted peanuts for topping
- Large skillet
Step-by-Step Instructions:
Prep: 5 minutes | Cook: 10 minutes | Servings: 4
- In a large skillet, brown the ground meat until it is no longer pink.
- Add minced garlic and sauté until fragrant (30 seconds).
- Add the cabbage or coleslaw mix, soy sauce, and ginger. Sauté until mixture is tender.
- Make a well in the center of the pan and scramble the egg in the well over low heat.
- Stir in sriracha and toasted sesame oil. Sprinkle with green onions.
- Top with roasted peanuts. You can also add more soy sauce, sriracha and toasted sesame oil to taste.
Giving Credit Where It's Due
There are many versions of this recipe circulating online, but this one from The Girl Who Ate Everything tops them all in my opinion. Take a look at her other recipes for more keto-friendly options. Give Egg Roll in a Bowl a try and see how easy and delicious healthy eating can be!
