Cuisine HELP: Alfredo Sauce

Substitute broccoli for the pasta and enjoy a delicious, keto-friendly Chicken Alfredo!

This is one of the Aase family's all time favorites. When a group of us is together for any extended time, you can bet this will be on the menu. This recipe is easy to adapt to feed children or family members not following the keto diet. When I prepare this sauce for my family, I make pasta for the kids and then enjoy my portion (as pictured) over steamed broccoli and grilled chicken with some extra parmesan sprinkled on top. This is so easy and once you taste homemade Alfredo sauce you won't go back. Give it a try!

How I Make it

I've used both freshly grated and pre-grated parmesan cheese and the sauce turns out great both ways. I usually buy the big jar of minced garlic from Costco, but you could easily just mince a clove of fresh garlic or use an extra 1/2 tsp of garlic powder instead.

Ingredients and Supplies

  • 1/2 cup butter (one stick)
  • 2 cups heavy whipping cream
  • 4 ounces cream cheese
  • 1 tsp minced garlic
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 cup grated parmesan cheese

Step-by-Step Instructions:

Prep: 5 minutes | Cook: 10 minutes | Servings: 8

  1. In a medium saucepan, combine butter, cream, and cream cheese. Cook over medium heat until melted, whisking to combine.
  2. Add minced garlic, garlic powder, Italian seasoning, salt, and pepper. Continue to whisk until smooth. Whisk in parmesan cheese.
  3. Bring to simmer and cook for 3-5 minutes until sauce has thickened slightly. Serve over steamed veggies and grilled/cooked chicken.

Giving Credit Where It's Due

I've tried quite a few Alfredo sauce recipes over the years searching for the best one. This recipe from The Recipe Critic takes the cake. The combination of cream, cream cheese, butter and parmesan really can't be beat. Give it a try for your next family gathering—you won't be disappointed.
