Cuisine HELP: Crack Chicken Soup

Soup season is still in full swing and we are excited to share another one of our favorites with you: crack chicken soup! This creamy and filling soup is a cold weather staple filled with hearty pieces of chicken, bacon, cheese, spinach, and the secret ingredients that it makes it so "addicting"—ranch seasoning!

How I Make It

See the "Giving Credit Where Credit Is Due" section for a follow-along recipe video. I like to double the recipe for extra leftovers and prepare it in our Lodge dutch oven! Unlike in the recipe video, I use McCormick Simple & Clean 3-1 Ranch Seasoning instead of making our own blend (shoutout to Lisa Aase for introducing me to this delicious ranch seasoning with clean ingredients!)

Ingredients

  1. 4 slices of chopped bacon
  2. 1 tablespoon butter
  3. 1 white onion, diced
  4. 3 cloves of minced garlic
  5. 4 to 6 cups of chicken broth
  6. 2 tablespoons of McCormick ranch 3-1 seasoning (although you can definitely add more to your liking!)
  7. Salt and fresh ground pepper to taste
  8. 1 bay leaf
  9. 4 cups of shredded chicken
  10. 1 package of cream cheese
  11. 1 cup shredded cheddar cheese
  12. 3 to 4 cups baby spinach
  13. 1/4 cup heavy cream
  14. Sliced green onion for garnish
  15. Optional: sprinkle of dried dill weed and chives

Step-By-Step Instructions

Prep: 10 minutes | Cook: 25 minutes (plus time to cook chicken) | Servings: 8

  1. Cook and shred one pound of chicken (I like to use the air fryer for this).
  2. Cook the bacon in the dutch oven (or another soup pot), then remove the bacon from the pot and chop. Keep the grease.
  3. Melt butter into the dutch oven, then add the onion and garlic. Stir until onions are translucent.
  4. Add the chicken and the bacon into the pot.
  5. Add cream cheese and cook until the cream cheese is melted.
  6. Add the chicken broth. Then add the salt, pepper, and ranch seasoning mix, then stir.
  7. Add cheddar cheese and spinach.
  8. Cover and let simmer for 20 minutes.
  9. Add the heavy cream and green onion garnish, then serve!
