Cuisine HELP: Crack Chicken Soup

Soup season is still in full swing and we are excited to share another one of our favorites with you: crack chicken soup! This creamy and filling soup is a cold weather staple filled with hearty pieces of chicken, bacon, cheese, spinach, and the secret ingredients that it makes it so "addicting"—ranch seasoning!
How I Make It
See the "Giving Credit Where Credit Is Due" section for a follow-along recipe video. I like to double the recipe for extra leftovers and prepare it in our Lodge dutch oven! Unlike in the recipe video, I use McCormick Simple & Clean 3-1 Ranch Seasoning instead of making our own blend (shoutout to Lisa Aase for introducing me to this delicious ranch seasoning with clean ingredients!)

Ingredients
- 4 slices of chopped bacon
- 1 tablespoon butter
- 1 white onion, diced
- 3 cloves of minced garlic
- 4 to 6 cups of chicken broth
- 2 tablespoons of McCormick ranch 3-1 seasoning (although you can definitely add more to your liking!)
- Salt and fresh ground pepper to taste
- 1 bay leaf
- 4 cups of shredded chicken
- 1 package of cream cheese
- 1 cup shredded cheddar cheese
- 3 to 4 cups baby spinach
- 1/4 cup heavy cream
- Sliced green onion for garnish
- Optional: sprinkle of dried dill weed and chives
Step-By-Step Instructions
Prep: 10 minutes | Cook: 25 minutes (plus time to cook chicken) | Servings: 8
- Cook and shred one pound of chicken (I like to use the air fryer for this).
- Cook the bacon in the dutch oven (or another soup pot), then remove the bacon from the pot and chop. Keep the grease.
- Melt butter into the dutch oven, then add the onion and garlic. Stir until onions are translucent.
- Add the chicken and the bacon into the pot.
- Add cream cheese and cook until the cream cheese is melted.
- Add the chicken broth. Then add the salt, pepper, and ranch seasoning mix, then stir.
- Add cheddar cheese and spinach.
- Cover and let simmer for 20 minutes.
- Add the heavy cream and green onion garnish, then serve!
