Cuisine HELP: Keto Chocolate Mug Cake

This single-serve keto treat is great to whip up when the sugar cravings hit!

My 14-year-old daughter Evelyn is very interested in healthy eating. She loves experimenting in the kitchen and coming up with healthy snacks for her siblings and herself. I gave her this mug cake recipe to try (knowing it would be right up her alley) and she loved it! The following post is written by her.

Imagine this: a sugar-free, keto, quick, easy, delicious chocolate cake. Sounds too good to be true, doesn't it? Well, it's real! This keto chocolate mug cake takes only minutes to make, and tastes just as good as other chocolate cake. So next time the sugar cravings hit, whip this up and enjoy!

How I Make It

I find this works best in a 10-12 ounce mug. If you are using baking chocolate rather than the chocolate chips, you may want to increase the sweetener a bit.

Ingredients

  • 1 TBLS salted butter
  • 3/4 an ounce unsweetened baking chocolate or sugar-free chocolate chips such as Lily's
  • 3 TBLS blanched almond flour
  • 2 tsp keto-friendly sweetener (I used Pyure, but feel free to substitute in whatever you have)
  • 1/2 tsp baking powder
  • 1 large egg
  • 1/4 tsp vanilla extract

Step-By-Step Instructions

Prep: 5 minutes | Cook: 3 minutes | Servings: 1

  1. Put the butter and chocolate in a mug. Make sure the mug is at least twice the volume of all the ingredients as the cake will rise. Microwave for 50 seconds, stirring halfway through.
  2. When the butter and chocolate are melted, stir to combine.
  3. Add the almond flour, sweetener, baking powder, egg, and vanilla, then mix thoroughly.
  4. Microwave for one minute until just firm (don't overcook!)
  5. Serve with sugar-free whipped cream or keto vanilla ice cream and enjoy!
