Cuisine HELP: Keto Chicken Fajita Skillet

Fajitas are one of my go-to meals to make for my family. We often have them as "fajita bowls" over rice (subbing in cauliflower rice for those of us following a ketogenic diet) and topping with whatever we have on hand.
Some ideas for low-carb toppings include cheese, sour cream, avocado or guacamole, queso, fresh cilantro, lime wedges, pico de gallo, salsa verde, lettuce, and pickled jalapeños. Just be mindful of the carbs in things like salsa and pico—they can add up quickly.
How I Make It
I used the taco seasoning that I had on hand, but you can easily mix up your own keto taco seasoning to make sure the carbs stay as low as possible.
I used 2 big chicken breasts when I made this, but thighs would also taste great. Use whatever you prefer.
You can serve this in a bowl over cauliflower rice, over lettuce as a fajita salad, or rolled up in lettuce wraps. It's delicious every way!
Ingredients
- 4 TBLS butter
- 1 lb boneless, skinless chicken (thighs or breasts) cut into bite sized pieces
- 1 medium onion, thinly sliced
- 3 bell peppers, thinly sliced (I usually buy the three pack at the store of orange, red, and yellow)
- 1 jalapeño or pickled jalapeños to taste (optional)
- 1 TBLS taco seasoning
Step-By-Step Instructions
Prep: 10 minutes | Cook: 20 minutes | Servings: 4
- Heat two tablespoons of butter in a large cast iron skillet at medium heat.
- Place chicken pieces in the heated pan and sprinkle with half of the taco seasoning. Sauté chicken until fully cooked through (8-10 minutes). Remove chicken from skillet.
- Melt remaining butter in skillet and add the thinly sliced onions, peppers, and jalapeños (if using) and remaining taco seasoning. Cook until peppers are soft and onions are translucent (8-10 minutes).
- Add chicken back to the skillet to warm with veggies.
- Adjust seasoning to taste and enjoy!
