Taco Soup: Cuisine HELP

It's time for another installment of Cuisine HELP! And I think it's time for another great soup to help get you through these winter nights. This soup is a delicious keto-friendly option for Taco Tuesday. We've been making it a couple times a month lately, and it's my husband's favorite!
Ingredients
- 2 pounds of ground beef
- 2 packets of taco seasoning
- 2-3 cloves of minced garlic
- 1 white onion
- 2 8 oz. packages of cream cheese
- 1 bag of coleslaw mix
- Cilantro
- 2 cans of Rotel (I like to do one can of mild, 1 can of fire roasted!)
- 16-32 oz of chicken or beef broth (Depending on how much broth you prefer in your soup)
- Optional: Sliced avocado, lettuce, Mexican cheese or sour cream to top it off
How I Make It
- Brown the beef and remove excess fat.
- Add onions, minced garlic, taco seasoning mix and a splash of Rotel juice. Mix until onions are translucent.
- Add 2 blocks of cream cheese and mix until melted and combined.
- Add the 2 cans of Rotel, a sprinkle of chopped cilantro, and bag of coleslaw mix and stir.
- Add the chicken broth (or beef broth, whatever you prefer!) and another packet of taco seasoning.
- Reduce heat and simmer.
- Serve with any toppings you prefer! Some great options could be sliced avocado, cilantro, sour cream, Mexican cheese, or lettuce.
