Chicken Cordon Bleu Casserole: Cuisine HELP

Chicken and bacon smothered with Swiss cheese and a flavorful sauce!

When my husband Kyle and I got married one of his favorite meals was his mom's chicken cordon bleu. While delicious, this meal was time consuming to make (and took more skill than I had at the time) so I was hesitant to attempt making it. We settled for enjoying it when we'd visit Kyle's parents.

Several years ago I stumbled across a chicken cordon bleu casserole recipe, and since then it's been a staple in our house. While not the same as the fancy dish Kyle's mom would make, the flavor hits the spot with the classic combination of chicken, ham and melty Swiss cheese.

How I Make It

The original recipe calls for ham, but we prefer it with bacon. Either would taste great in this dish!

You can use rotisserie chicken or whatever cooked chicken you prefer. I usually cook 4 large chicken breasts in the crock pot and then assemble the casserole and bake it when it's time for supper.

The white wine (or cooking wine) is optional but adds some nice flavor. The last time I made this I used Marsala cooking wine that I found in my cupboard.

If your chicken seems on the drier side you can add some heavy cream or chicken broth to the sauce mixture. I often drizzle some cream on top before I add the Swiss cheese.

This is great served with roasted broccoli or cauliflower rice for a great keto-friendly meal.

Ingredients

  • 6 cups cooked and shredded or cubed chicken
  • 1 pound of bacon, cooked and broken into bite sized pieces (can also use ham)
  • 1 stick of butter, melted
  • 8 ounces of cream cheese, softened
  • 1 TBLS Dijion mustard
  • 1 TBLS white wine (optional)
  • 2 TBLS lemon juice
  • 1/2 tsp salt
  • 8 ounces Swiss cheese (can be sliced or shredded)

Step-By-Step Instructions

Prep: 15 minutes | Cook: 30 minutes | Servings: 6-8

  1. Preheat oven to 350 degrees.
  2. Place cooked chicken in a 9x13 pan. Top with cooked bacon (or ham if you prefer).
  3. In a medium mixing bowl combine melted butter, softened cream cheese, mustard, white wine, lemon juice and salt. Stir until everything is incorporated, making a thick sauce.
  4. Spread sauce mixture over the meat in the pan.
  5. Top with the Swiss cheese and bake for 30-35 minutes until hot and bubbly.
