Finnish Salmon Soup: Cuisine HELP

Today I want to share a quick soup recipe that I made this week! We had some leftover salmon after a family get-together, and I was inspired to make good use of it. So, I looked in my fridge and pantry and whipped up the creamy and hearty soup! The cauliflower rice adds some nice substance and texture to the soup, and it's a nice low-carb version of a wild rice soup. Enjoy!

Ingredients

1 tablespoon Dill
1/2 white onion
12 oz Cauliflower rice
32 oz Chicken broth
1 1/2 cup Heavy cream
2 cloves garlic
1 tbsp butter

How I Make This

  1. Sautee onion in butter until translucent.
  2. Add garlic and stir until fragrant.
  3. Add cooked salmon.
  4. Add 32 oz of chicken broth
  5. Add dill and salt and pepper to taste.
  6. Add heavy cream and cooked cauliflower rice.
  7. Reduce heat and simmer for 15 minutes.
  8. Serve and enjoy!
