Mexican Keto Ground Beef Casserole: Cuisine HELP

A quick and flavorful meal you won't regret making!

My children usually aren't big fans of cauliflower, but all five of them cleaned their plates when I made this Keto Mexican Casserole! This is such an easy weeknight meal that is satisfying and filling!

I doubled this recipe (pictured to the right) for my family of 7 and it was just enough to feed us all.

How I Make It

You could use frozen riced cauliflower, but I think it may result in a more watery casserole. I grated a small head of fresh cauliflower (for my double batch) using a box grater and it was perfect.

I think the fresh cilantro really makes the recipe. Grab a bundle from produce section at the grocery store. You don't have to pick the leaves off the stems, just chop up the bundle - stems and all.

My family likes to top this with sour cream and sliced avocado. You can also squeeze some fresh lime wedges over this!

Ingredients

  • 1 pound ground beef (I'd use 85% lean or higher for this)
  • 1 TBLS Taco Seasoning, divided
  • 2 cups cauliflower, riced
  • 1 bell pepper, thinly sliced or chopped (your preference)
  • 1 cup shredded cheddar cheese, divided (remember to shred your own to avoid the added starch that's added to the pre-shredded cheese in a bag)
  • 1 cup of salsa (look to make sure there isn't sugar in the ingredients)
  • 1/4 cup heavy cream
  • 4 ounces cream cheese
  • 1/2 tsp salt
  • Fresh cilantro to taste

Step-By-Step Instructions

Prep: 20 minutes | Cook: 15 minutes | Servings: 4

  1. Preheat the oven to 375 degrees
  2. Brown ground beef in a large, oven safe pan until no longer pink (I LOVE my Lodge covered casserole pan for this!).
  3. Drain excess grease then add 2 teaspoons of the taco seasoning to the meat. Cook an additional minute or so and then remove meat from the pan (no need to wipe the pan clean).
  4. Add the riced cauliflower and sliced pepper to the pan and cook until tender, around 5 minutes. Then add the remaining teaspoon of taco seasoning to the veggie mixture and stir to combine.
  5. Add the beef back to the pan and stir to combine.
  6. Add 1/2 cup of the cheese, the salsa, cream, cream cheese and salt to the pan. Stir until cream cheese is melted and everything is combined.
  7. Bring to a boil then reduce and simmer the mixture for 2-3 minutes (stirring continually) until thickened.
  8. Sprinkle the remaining cheese on top and bake in oven for 15 minutes.
  9. Sprinkle with fresh cilantro and enjoy!
