Keto Chocolate Swiss Roll: Cuisine HELP

Give this rich, easy and satisfying keto dessert a try!

This keto-friendly dessert is sure to please! The combination of chocolate cake and cream cheese filling is delicious. While this isn't quite as easy as our keto chocolate mug cake, it's easy enough that you don't need to be an experienced baker to give it a try.

Even my five children loved this and fought over who got the last piece. They aren't eating a keto diet but still found this sweet and satisfying!

How I Make It

I found the original recipe at ruled.me.

Make sure you roll up your cake when it is still warm (while you make the filling). This will help to minimize cracking of the cake. As you can see from my photo I still had some cracking, but overall it held together well. Even if your presentation isn't perfect the taste won't suffer.

Ingredients

Chocolate Cake

  • 1 cup almond flour
  • 4 TBLS, melted butter
  • 3 eggs
  • 1/4 cup psyllium husk powder or flakes (the original recipe called for powder, but I used flakes with no problem)
  • 1/4 cup cocoa powder
  • 1/4 cup coconut milk (you could sub in heavy cream if you don't have this)
  • 1/4 cup sour cream
  • 1/4 cup erythritol sweetener (I used Splenda Magic Baker)
  • 1 tsp vanilla
  • 1 tsp baking powder

Cream Cheese Filling

  • 8 ounces cream cheese
  • 8 TBLS butter (one stick)
  • 1/4 cup sour cream
  • 1/4 cup erythritol sweetener
  • 1 tsp vanilla

Step-By-Step Instructions

Prep: 10 minutes | Cook: 14 minutes | Servings: 12

Cake Instructions:

  1. Preheat oven to 350 degrees
  2. Measure dry ingredients (almond flour, psyllium husks/flakes, sweetener, cocoa powder, and baking powder) and mix with a whisk.
  3. Mix in 4 tablespoons melted butter, 3 eggs and 1/4 sour cream into dry mixture.
  4. Add 1/4 cup coconut milk or heavy cream and mix to combine.
  5. Spread the mixture onto a parchment paper lined baking tray. My cake rectangle was about 10 x 14 inches.
  6. Bake for 12-14 minutes (I baked mine for 13 minutes).
  7. Let cool slightly, then gently roll from the narrow end. Keep the cake rolled while you make the filing.

Filling Instructions:

  1. In a bowl combine all the filling ingredients and mix until incorporated. I used my kitchen aid, but you could also use a hand mixer or a whisk.
  2. Unroll the cake and place filling mixture on top. Gently spread filling over the cake with a spoon.
  3. Roll the cake back up, slice, and enjoy!
