Keto Queso Sauce: Cuisine HELP

This cheesy queso sauce is a great addition to any Mexican meal!

Cheesy queso with tortilla chips is near the top of my list of favorite foods. While you can't enjoy this traditional combination on the keto diet, you can modify it to fit into your low carb life.

If you aren't avoiding gluten, you could try making low carb tortilla chips. Just cut up a few low carb tortillas into triangles (my husband enjoys these), spray with oil, sprinkle with salt, and bake until crispy.

I buy my favorite queso at Costco (Quesomama White Queso with diced green chilies), but when I don't have time to make the hour drive to the store, this recipe is a good replacement.

How I Make It

It's best if you make this right before you want to eat. It doesn't take long! If it cooks too long it will thicken up quite a bit. If this happens, feel free to add cream or water to thin it out to your desired consistency.

If you want spicier queso throw in an extra jalapeño pepper!

Make sure you buy the blocks of cheese and shred them yourself. This way you avoid the added starch and the cheese will melt better.

Ingredients

  • 2 TBLS butter
  • 1/2 cup onion, finely diced
  • 1 jalapeno, minced
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 cup heavy cream
  • 8 ounces cream cheese
  • 8 ounces cheddar cheese, shredded
  • 4 ounces pepper jack cheese, shredded

Step-By-Step Instructions

Prep: 10 minutes | Cook: 10 minutes | Servings: 10

  1. Melt butter in skillet over medium heat.
  2. Add the diced onions, jalapeños, ground cumin, and salt. Sauté until veggies are softened.
  3. Add the cream cheese and heavy cream. Stir constantly until melted.
  4. Lower the heat and add in the shredded cheese a handful at a time. Stir until all the cheese is melted and the queso is creamy and smooth.
  5. If needed, add additional heavy cream or water to thin to desired consistency.
  6. Enjoy!

Ideas for dipping

I enjoyed some leftover queso and salsa over some scrambled eggs just the other day when I broke my fast. It was a delicious!
