Keto Bacon and Cheese Quiche: Cuisine HELP
This quiche makes a great breakfast or weeknight meal!

I, for one, am thankful that the price of eggs is finally going down! The five dollars a dozen I was paying this winter was painful on our budget.
Eggs are a super food full of healthy protein, fat, and many important vitamins and minerals including B12, selenium, iron, and choline.
My kids aren't huge fans of scrambled eggs, but they do gobble up this keto-friendly quiche. Give it a try, the leftovers heat up well in the microwave.
How I Make It
I keep this pretty simple, but this recipe lends itself to being customized to what you like and have on hand. Feel free to add in things like: caramelized onions, roasted broccoli, bell peppers, sausage, ham, mushrooms, or any other low carb veggies or meat you prefer. You could also change up the kind of cheese. There are so many options!
You can make this with or without the crust. I think it's definitely more satisfying and filling with the crust.
I like to bake my bacon in the oven on a sheet pan at 375 degrees. You can do this ahead of time to cut down on the preparation time when you go to make the quiche.
Ingredients
Crust:
- 2 cups almond flour
- 1/2 tsp xanthan gum
- 1/2 tsp salt
- 3 TBLS butter, melted
- 1 large egg
Quiche:
- 5 large eggs
- 1 1/2 cups heavy cream
- 1 pound bacon, cooked and crumbled
- 1 cup cheddar cheese
- 1/3 cup green onions, sliced
Step-By-Step Instructions
Prep: 20 minutes | Bake: 60 minutes | Servings: 8
Crust:
- Preheat oven to 350 degrees.
- In a small bowl combine the dry crust ingredients. Mix in the egg and melted butter.
- The original recipe calls for forming the dough into a ball, wrapping it in plastic wrap, and letting it chill in the fridge for an hour. I skipped this step and it worked fine. My crust wasn't as pretty as it could have been, but it tasted great.
- Roll out the crust onto a sheet of parchment paper. Invert crust into a creased pie plate, patching any holes or tears with your fingers.
- Poke holes in the bottom of the crust with a fork and then blind bake in the oven for 10 minutes.
- Remove crust from oven and set aside to cool.
Quiche:
- Cook, drain, and crumble bacon.
- In a mixing bow combine all the quiche ingredients.
- Transfer mixture into the prepared crust and bake 45-50 minutes, until just set in the middle.
- Remove from oven and let rest a few minutes before slicing and serving.
- Salt and pepper your slice to taste and enjoy!
