Keto Millionaire Chicken Casserole: Cuisine HELP
This flavorful keto casserole makes an easy weeknight meal!

I tried this recipe the other day and it was a hit! I appreciated that it was easy and I had all of the ingredients on hand. It paired well with roasted asparagus and unsweetened applesauce for my kids.

How I Make It
I doubled the recipe below to make a 9 x 13 pan to feed my family of 7. A single recipe, made in an 8x8 pan, will serve 4-6 people. I stuck the chicken breasts in the crock pot right after lunch and they were cooked by the time I was ready to make the casserole for supper. You could also use rotisserie chicken to make this recipe even easier!
I used cheddar cheese, but you could use whatever kind of cheese you have on hand. Remember block cheese, that you shred yourself, is always the best choice to avoid added starch.
I used my food processor to crush the pork rinds, but you could also use a ziploc bag and a rolling pin if you don't have a food processor.
Don't be afraid of salt and pepper in this recipe. The right amount really enhances the flavor.
Ingredients

- One pound of chicken, cooked and shredded
- 1 cup heavy cream
- 1/3 cup sour cream
- 1 tsp garlic powder
- 1 cup cheddar cheese, shredded
- 1/2 cup cottage cheese
- 1 cup pork rinds, crushed
- 1/4 cup grated parmesan cheese
Step-By-Step Instructions
Prep: 20 minutes | Cook: 40 minutes | Servings: 4-6
- Preheat oven to 350 degrees
- Combine cream, sour cream, garlic powder, and salt and pepper to taste in a medium saucepan.
- Simmer until mixture is thickened and combined.
- Stir in the shredded cheese until melted and incorporated.
- Remove from heat.
- In a separate bowl combine the crushed pork rinds and parmesan cheese.
- Mix shredded chicken, cottage cheese and sauce mixture in a separate bowl.
- Spread mixture in the bottom of your casserole dish and top with the pork rind mixture.
- Bake for 30 minutes until bubbly and heated thorough.
- Cool a few minutes and then enjoy!
