Keto Stuffed Peppers: Cuisine HELP

Give this easy weeknight meal a try!

One of my favorite strategies for feeding my family of 7 is reverse meal planning. When doing this, I plan my meals AFTER I've been to the grocery store. This allows me to take advantage of any sales and mark downed items or produce that I find.

Enter these low carb stuffed peppers! I found 2 bags of three bell peppers for $.99 each at the store last week. When I got home I searched for a keto-friendly stuffed pepper recipe and whipped this up for supper. It was so easy and flavorful!

How I Make It

The original recipe called for a can of diced tomatoes, but I used a can of tomato sauce instead with good results.

As written these are pretty mild, feel free to add some ground cayenne pepper for extra heat.

If you don't have a keto-friendly taco seasoning in your cupboard here is good recipe for one you can make at home.

I used part of a bag of frozen riced cauliflower for this recipe. I steamed it in the bag in the microwave and then added the 1 cup called for. You could easily add more if you'd like; it adds a nice bulk to the stuffing mixture.

Ingredients

  • 4 Bell Peppers
  • 1 TBLS Olive Oil
  • 1/2 cup Onion, finely chopped
  • 1 pound, Ground Beef (I used 85% lean)
  • 2 TBLS Taco Seasoning
  • 1, 15 oz can Diced Tomatoes (including juices) OR 15 oz can Tomato Sauce
  • 1 cup, steamed Cauliflower Rice
  • 2 cups Cheddar Cheese, shredded and divided

Step-By-Step Instructions

Prep: 10 minutes | Cook: 20 minutes | Servings: 4

  1. Preheat oven to 350 degrees and grease a 9 x 13 inch baking dish.
  2. Core the peppers and then slice in half and remove seeds and membranes.
  3. Heat oil in large skillet over medium heat. Add diced onions and sauté until soft (a minute or two).
  4. Add in ground beef and cook until browned. Drain any excess grease.
  5. Stir in taco seasoning and diced tomatoes/sauce. Simmer a minute.
  6. Remove from heat and stir in cauliflower and half of the shredded cheese.
  7. Stuff the pepper halves with the filling mixture and top with remaining cheese.
  8. Bake for 20 minutes or until cheese is melted and the peppers are tender.
  9. Enjoy!
