Lisa’s Keto Granola: Cuisine HELP

Everyone that I give this granola to at the clinic loves it; from employees and members to the delivery drivers that stop in!
This is a easy, keto-friendly snack or breakfast to have on hand. Make a batch at the beginning of the week and enjoy this grab and go food.
Ingredients

- 1 cup pecan halves
- 1 cup unsweetened coconut flakes
- 1/2 cup almonds
- 1/2 cup pumpkin seeds
- 1/2 tsp salt
- 1/2 cup butter
- 1/4 cup Swerve Brown Sugar
- 1/4 cup Swerve Powdered Sweetener
- 1/2 tsp maple extract
Step-By-Step Instructions
Prep: 20 minutes | Cook: 25 minutes | Servings: 8
- Preheat oven to 300 degrees and line a large baking sheet with parchment paper.
- Combine pecans, coconut, almonds, pumpkin seeds, and salt in a food processor. Pulse until you have course crumbs, some larger pieces are fine.
- In a saucepan combine butter and sweeteners over low heat. Whisk until butter is melted and sweeteners have dissolved.
- Remove from heat and stir in maple extract.
- Combine the nut mixture and butter mixture together and stir.
- Transfer the combined mixture to the prepared pan. Cover with an additional sheet of parchment paper and use a rolling pin over the top, pressing down evenly to uniform thickness.
- Remove top sheet of parchment paper and bake 20 to 30 minutes, until golden brown.
- Remove from heat and let cool completely before breaking into chunks.
- Store in an airtight container at room temperature for about a week.
