Big Mac Salad: Cuisine HELP

A low-carb salad with all the flavors of the classic burger!

Salads are some of my favorite summer meals! You can't go wrong with crisp vegetables and hearty protein topped with a creamy dressing when it's hot outside.

This Big Mac Salad is one of my family's current favorites. It satisfies even my pickiest eaters. I love that not only is it delicious, it's also quick and easy to make.

How I Make It

Feel free to customize this recipe to fit your tastes. If you don't like pickles or tomatoes, leave them off your salad. My husband Kyle enjoys this meal with just the lettuce, cheese, meat, and the dressing. I would recommend not omitting the pickles from the dressing recipe, they give it that classic Big Mac taste. Make sure to use dill pickles and not sweet pickles.

I like using a bag of shredded iceberg lettuce for this meal, but feel free to use whatever greens you have on hand. I used this sweetener, but any low-carb sweetener that you have can be used to taste.

Ingredients

Salad:

  • 1 pound Ground Beef
  • 1 tsp Salt
  • 1/4 tsp Black Pepper
  • 8 oz Romaine or Iceberg Lettuce
  • 1 cup Tomatoes (chopped)
  • 1 cup Cheddar Cheese (shredded)
  • 1/2 cup Pickles (diced)

Dressing:

  • 1/2 cup Mayo (either homemade or store bought works)
  • 2 Tbsp Pickles (diced)
  • 2 tsp Yellow Mustard
  • 1 tsp Vinegar
  • 1/2 tsp Smoked Paprika
  • 1 1/2 Tbsp low-carb sweetener

Step-By-Step Instructions

Prep: 10 minutes | Cook: 10 minutes | Servings: 4

  1. Brown ground beef in a large skillet over medium-high heat, breaking it apart with a spoon as it's cooking (8-10 minutes). Drain excess grease and season with salt and pepper.
  2. While the meat is cooking, combine all the dressing ingredients in a blender and puree. Transfer dressing to a jar and refrigerate until ready to eat.
  3. In a large serving bowl, combine the lettuce, tomatoes, shredded cheese, and pickles. Top with the ground beef and drizzle with the dressing.
  4. Toss to coat and enjoy!
