Pulled Pork Stuffed Peppers: Cuisine HELP

Lee and I love these stuffed peppers! I always top them with extra Gouda cheese and my homemade BBQ sauce.

How I Make It

For the pulled pork, I usually stick a pork roast (shoulder or loin) in the crock pot and then shred once it is fully cooked. You can freeze any extra you have in two cup portions. That way the next time you want to make these stuffed peppers, you can simply thaw a baggie of meat and you will be ready to go.

Ingredients

  • 2 large bell peppers
  • 12 ounces (2 cups) pulled pork
  • 1 1/2 cups shredded Gouda cheese
  • 1/3 cup sugar-free BBQ sauce (try my homemade version)
  • 2 tablespoons cilantro, chopped

Step-By-Step Instructions

Prep: 5 minutes | Cook: 25 minutes | Servings: 2-4

  1. Preheat oven to 375 degrees with the rack in the middle position.
  2. Cut peppers in half vertically and scoop out seeds and membranes.
  3. Place halved peppers in a microwave safe dish and steam for 3-4 minutes or until softened. Pour out any water.
  4. Combine pulled pork, BBQ sauce, and one c‹up of the Gouda cheese.
  5. Divide filling mixture between peppers.
  6. Bake 20-30 minutes.
  7. Top with remaining cheese and return to oven until melted.
  8. Garnish with cilantro and enjoy!
