Korean Beef Bowl: Cuisine HELP

This quick and easy keto meal is full of flavor!

This meal is quickly becoming one of our favorites! The ground beef coated with a sweet Asian sauce tastes great over cauliflower rice. Sprinkle some green onions and sesame seeds on top to complete this keto-friendly dish!

If you aren't a fan of cauliflower, you could alternately enjoy this Korean beef in lettuce wraps.

How I Make It

You can use frozen riced cauliflower, but I think you get the best texture from using fresh. You can either buy it riced, in the refrigerator section of your produce department, or you can grate a head of cauliflower yourself using a food processor or cheese grater.

Feel free to adjust the sweetener to suit your taste.

Ingredients

Cauliflower Rice:

  • 1 tablespoon Olive Oil
  • 1 pound Riced Cauliflower (about one head if using fresh)
  • Salt and Pepper

Beef:

  • 1 pound Ground Beef
  • 1/2 teaspoon Salt
  • 2 teaspoons Minced Garlic
  • 1/4 cup Coconut Aminos
  • 1/4 cup Beef Broth
  • 1 tablespoon Toasted Sesame Oil
  • 1/4 teaspoon Ground Ginger
  • 1/8 teaspoon Cayenne Pepper
  • 2 tablespoons Keto-Friendly Sweetener (I used this one)

Garnish with green onions, everything bagel seasoning or toasted sesame seeds. You could throw on some roasted peanuts for some extra crunch as well!

Step-By-Step Instructions

Prep: 5 minutes | Cook: 15 minutes | Servings: 2-4

  1. Heat one tablespoon of olive oil in a large skillet over medium-high heat. Add riced cauliflower and sprinkle with salt and pepper. Sauté for several minutes until cooked through but not mushy.
  2. Remove cauliflower rice to a medium bowl and cover to keep warm.
  3. In a small bowl whisk together coconut aminos, broth, sesame oil, ginger, cayenne and sweetener. Set aside.
  4. Add ground beef and 1/2 teaspoon of salt to skillet and cook on medium high heat until browned and fully cooked (8-10 minutes). Drain off any excess grease.
  5. Add the minced garlic to the skillet and cook one minute longer until garlic is soft and fragrant.
  6. Pour the sauce mixture over the beef and simmer for about five minutes until sauce is reduced and thickened.
  7. Serve over the prepared cauliflower rice, garnish and enjoy!
