Keto Pumpkin Bars: Cuisine HELP

All the flavors of fall without the carbs, sugar, and grains!

Are you looking for a low-carb dessert to enjoy this Thanksgiving? These pumpkin bars may be just what you need! I made them for the first time a couple of weeks ago and they were a hit with everyone. Even my 6-year-old grandson Griffin gave them two thumbs up. Give these moist and delicious pumpkin bars a try!

Ingredients

Pumpkin Bars

  • 1 cup pumpkin puree
  • 1/4 cup coconut oil (at room temperature)
  • 2 ounces cream cheese
  • 2 large eggs
  • 1 teaspoon vanilla
  • 1 cup blanched almond flour
  • 2/3 cup sweetener
  • 2 teaspoons baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt

HELPcare approved sweeteners include: blends of monk fruit, allulose, stevia, and/or erythritol.

Cream Cheese Frosting

  • 6 ounces cream cheese
  • 1/3 cup powdered sweetener
  • 1 teaspoon vanilla
  • 1 tablespoon heavy cream

The recipe can be doubled to fit in a 9x13 pan if you are making dessert for a crowd. The baking time for me was around an hour when I did this.

Step-By-Step Instructions

  1. Preheat oven to 350 degrees.
  2. Line a square (9x9) baking pan with parchment paper.
  3. Combine cream cheese and coconut oil in a small bowl. Microwave until you can stir them together evenly.
  4. In a large bowl combine pumpkin puree, melted cream cheese/coconut oil mixture, eggs and vanilla. Beat until smooth.
  5. In a separate bowl combine almond flour, sweetener, baking powder, pumpkin pie spice, and salt.
  6. Add the dry ingredients to the wet ingredients. Beat at a low speed until just combined.
  7. Pour the batter in to the lined baking pan and smooth out.
  8. Bake for 30 minutes, or until a toothpick comes out clean. Allow to cool completely.
  9. Make the frosting by beating together powdered sweetener, vanilla and cream cheese until smooth. Thin with cream if desired.
  10. After the bars are cooled completely, spread frosting on top and enjoy!
