Lemon-Parmesan Roasted Broccoli: Cuisine HELP

Add this yummy broccoli to your next low-carb meal!

I've been making this broccoli for my family for the last 15 years. It's the only way my husband and children will eat it!

Good news is, it's a super easy, low-carb side dish that you can feel good about adding to your plate.

Even if you aren't a fan of broccoli, I encourage you to give it a try! This method of roasting with the added flavors of garlic, lemon, and parmesan is sure to please!

Serve this alongside some Easy Chicken with our Smokey Chicken Sauce for an easy and satisfying low-carb meal!

How I Make It

I usually buy the big bag of fresh broccoli from Costco to feed my family of 7, but any fresh broccoli will work. I don't have definite amounts for this recipe - it's not fussy, just follow the step-by-step directions below and enjoy!

Ingredients

  • Fresh Broccoli Florets - cut into bite sized pieces
  • Olive or Avocado Oil
  • Minced Garlic
  • Kosher Salt
  • Coarse Black Pepper
  • A Fresh Lemon - zest and juice
  • Shredded or Shaved Parmesan Cheese

Step-By-Step Instructions

  1. Preheat the oven to 425 degrees.
  2. Rub a small amount of oil on a baking sheet. Add broccoli florets (cut into bite sized pieces) onto the sheet pan.
  3. Drizzle olive or avocado oil over the broccoli. For the pan I made pictured above I probably used 2 tablespoons of oil.
  4. Top with as much minced garlic as you prefer and sprinkle liberally with salt and pepper.
  5. Roast in preheated oven for around fifteen minutes, or until it reaches your desired level of tenderness and color.
  6. Once roasting is completed, zest lemon and squeeze as much of the lemon juice as you prefer over the top of the broccoli.
  7. Sprinkle with parmesan cheese and serve.
  8. Enjoy!
