Scrambled Eggs Supreme: Cuisine HELP

When Lisa and I are coaching people willing to explore a low-carb, ketogenic diet and intermittent fasting using HELP: The Health, Energy & Longevity Plan, one of the key moments is when I ask this question:

Do you like eggs?

If their answer is yes—or better yet emphatically yes—I inform them they have just hit the jackpot.

I am among those who could thrive on and enjoy a steady diet of eggs and bacon and grilled meat.

Lisa isn't. She has more of a need for comfort foods, and you'll see that in many of the recipes we'll be sharing in this series.

I enjoy everything she makes, and yet I also find this meal tasty and satisfying.

And because it has essentially zero impact on blood sugar levels, it's an excellent keto cornerstone.

Here's what I like to have for breakfast, which almost never means in the morning. Sometimes I'll have it around noon, and other times it's my only meal of the day, in the evening.

Ingredients

  • 4 eggs
  • Pre-cooked meat (4 strips of bacon, 4-5 sausages, half of a steak, or ham)
  • Bacon grease (saved from cooking bacon) or 2 tbsp butter
  • Minced garlic
  • 1/4 package of cream cheese (2 oz.)
  • Spices: salt, pepper and tarragon
  • Guacamole
  • Salsa
  • Grated cheddar cheese (optional)

Directions

  1. Cut off the desired amount of cream cheese from the package with a sharp knife, then divide that chunk into 4-5 pieces.
  2. Cut the meat into about 25-30 bite-sized pieces.
  3. Crack the eggs into a mug. Use the sharp knife to stir, breaking the yolks.
  4. Turn on the burner under the frying pan to medium heat.
  5. Take the stored bacon grease from the refrigerator and use a tablespoon to scoop some into the pan, tilting it gently until melted. If you don't have bacon grease, butter is an option.
  6. Spread the meat on the bottom of the pan. Add a teaspoon of minced garlic, stirring until ingredients are distributed evenly.
  7. Pour the eggs over the top of the meat, covering the bottom of the pan.
  8. Place the cream cheese pieces on top of the eggs, spacing evenly.
  9. When the bottom of the egg mixture starts to become firm, flip the edges in toward the middle, over the top of the cream cheese. This will help to melt the cream cheese without it having direct contact with the frying pan.
  10. When the eggs are fully cooked to your preference, serve onto a plate.
  11. Top your eggs with guacamole, salsa and cheddar cheese according to your tastes.

This meal is extremely low in carbohydrates, and the cream cheese and guacamole make it even more filling than a typical egg dish. With the meat cooked in advance, it only takes about 10 minutes to pull this together.

As I mentioned previously, Lisa doesn't care for eggs, so this is a single serving for me. Your appetite may vary, and you can adjust the number of eggs accordingly.
