Creamy Tuscan Soup: Cuisine HELP

Soup season is officially here and we could not be more excited! This recipe is as filling as it is tasty, makes great leftovers, and will warm you up on a cold evening.
This recipe is the first keto soup recipe we tried, and has remained a fan favorite in our household and a constant on our roster of cold weather go-to meals.
How I Make It
See the "Giving Credit Where It's Due" section at the bottom of this post for the original recipe video. This recipe is fantastic as-is, and I have not found a need to deviate from it much, however I have incorporated the following tweaks:
- I like to make this recipe with spinach instead of kale (this is just personal preference and you can absolutely make this soup with kale if you would prefer).
- I like to remove the excess oil from the Italian sausage before adding in the onions and extra ingredients (I find the soup to be a bit oily and the oil will often separate and rise to the top when I skip this step).
- I find my dutch oven to be the perfect size for this recipe (and for making soup in general).
- We also like to double this recipe to have even more leftovers throughout the week!
Ingredients
- 1 lb italian sausage
- 1 large white onion, chopped
- 1 cup of sun-dried tomatoes (drained but save some oil)
- 1 block of cream cheese
- 3 cloves minced garlic
- 1 tsp dried oregano
- 3/4 cup heavy cream
- 2 oz spinach (2-3 handfulls)
- 6 cups of chicken broth
Step-by-Step Instructions

- In a pan, brown your Italian sausage.
- Drain oil from the sausage and remove any excess with a paper towel.
- Add your chopped onion to the pan along with some oil from the jar of sun-dried tomatoes.
- Stir occasionally and continue to cook until the onions are translucent.
- Break cream cheese block into four parts. Add cream cheese and oregano.
- Cook until cream cheese is melted and completely incorporated into the sausage/onion mixture.
- Add minced garlic and stir until fragrant.
- Add sun-dried tomatoes and stir.
- Add spinach and stir until the spinach has compressed.
- Add chicken broth, put a lid on your pot, reduce heat, and simmer for 20-30 minutes.
- Stir in heavy cream before serving. Enjoy!
- Optional: Add parmesan to top.
