Italian Cheese and Sausage Soup: Cuisine HELP

There is something satisfying and cozy about enjoying a good bowl of soup for supper this time of year.
A few weeks ago I found this recipe and it really hit the spot! It was quick and easy to make and the leftovers were good too.
Ingredients
- 2 pounds ground Italian Sausage
- 3 cloves of garlic, minced
- 1/2 cup green pepper, chopped
- 1/2 cup onion, diced
- 1 (15 ounce) can fire roasted tomatoes, drained
- 1 (7 ounce) can tomato paste
- 1 (32 ounce) carton beef broth
- 8 ounces cream cheese
- 1/4 cup heavy cream
- 3 cups kale, stems removed and finely chopped
- 1 cup shredded parmesan
Step-By-Step Instructions
Prep: 5 minutes | Cook: 30 minutes | Servings: 4-6 bowls
- Brown sausage in a large pot or dutch oven over medium heat. Drain grease.
- Add the garlic, green pepper and onion. Sauté until softened.
- Add the drained can of tomatoes, paste, and broth.
- Stir in cream cheese and heavy cream. Reduce heat and stir until cream cheese is melted and incorporated into the soup.
- Stir in kale and simmer the soup on low for 10 minutes. Add in parmesan cheese just before serving.'
