Italian Cheese and Sausage Soup: Cuisine HELP

There is something satisfying and cozy about enjoying a good bowl of soup for supper this time of year.

A few weeks ago I found this recipe and it really hit the spot! It was quick and easy to make and the leftovers were good too.

Ingredients

  • 2 pounds ground Italian Sausage
  • 3 cloves of garlic, minced
  • 1/2 cup green pepper, chopped
  • 1/2 cup onion, diced
  • 1 (15 ounce) can fire roasted tomatoes, drained
  • 1 (7 ounce) can tomato paste
  • 1 (32 ounce) carton beef broth
  • 8 ounces cream cheese
  • 1/4 cup heavy cream
  • 3 cups kale, stems removed and finely chopped
  • 1 cup shredded parmesan

Step-By-Step Instructions

Prep: 5 minutes | Cook: 30 minutes | Servings: 4-6 bowls

  1. Brown sausage in a large pot or dutch oven over medium heat. Drain grease.
  2. Add the garlic, green pepper and onion. Sauté until softened.
  3. Add the drained can of tomatoes, paste, and broth.
  4. Stir in cream cheese and heavy cream. Reduce heat and stir until cream cheese is melted and incorporated into the soup.
  5. Stir in kale and simmer the soup on low for 10 minutes. Add in parmesan cheese just before serving.'
  6. Enjoy!
