Chicken, Broccoli and “Rice” Casserole: Cuisine HELP
Try this low-carb take on a favorite casserole!

It's important to us to set you up for success! We know the frustration of finding a promising new recipe, gathering the ingredients and spending the time to prepare it, only to have it flop or be less than satisfying.
My husband Lee and I both enjoyed this casserole and thought the cauliflower rice tasted like real rice. Give it a try, we think you will enjoy it too!
How I Make It
I used a big bag of frozen riced cauliflower and two bags of frozen broccoli florets. You can use whatever chicken you have, but we really liked this recipe with boneless, skinless chicken thighs. Rotisserie chicken would make this recipe even easier!
I added more cream than the original recipe called for, you could add up to a cup depending on your preference.
Ingredients
- 4 cups riced cauliflower
- 4 cups broccoli florets
- 1 1/2 pounds chicken, cooked and shredded
- 1 1/2 tablespoons chicken broth concentrate OR 2 teaspoons bouillon
- 1/2 cup heavy whipping cream
- 1/2 cup sour cream
- 2 1/2 cups shredded cheddar cheese
- salt and pepper to taste
Step-By-Step Instructions
Prep: 5 minutes | Cook: 35 minutes | Servings: 6
- Preheat the oven to 350 degrees and grease a 9x13 inch casserole dish.
- In a large skillet over medium heat, add the thawed cauliflower rice and cook until moisture is gone. Add in the frozen broccoli and season with salt and pepper.
- Add the cooked chicken, cream, sour cream, eight ounces of shredded cheddar, and bouillon to the skillet.
- Stir everything until heated through.
- Place mixture in the greased casserole dish, top with remaining cheddar cheese, and bake at 350 degrees until hot and bubbly, about 20-30 minutes.
- Enjoy!
