Keto Ground Beef Stroganoff: Cuisine HELP
This low carb take on a classic dish is sure to satisfy!

The combination of hearty meat, sautéed mushrooms and onions in a creamy sauce makes a great keto meal.
This meal is easy to prepare and can be ready in 30 minutes!
How I Make It
I doubled the recipe below for my family of seven and it went over well! At the request of my 12 year old son, I kept the onion and mushroom mixture to the side to add on as desired. I didn't mind eating his portion of the mixture; those flavors really make the dish!

I cooked up a spaghetti squash for my husband Kyle and I to use as the base for our stroganoff. If you haven't cooked one before it's very easy, and a good building block for keto meals. This post gives good instructions on preparing spaghetti squash. My growing children enjoyed this over creamy mashed potatoes.
We fill our freezer each year with a half of a beef and usually end up with lots of beef soup bones. I used some of the bones to make up a big batch of bone broth. This homemade, gelatinous broth is so healthy and added great flavor to the stroganoff. If you want to give it a try, this is the recipe I use. You can also use regular store bought beef broth with no problem!
Ingredients
- 2 TBLS olive oil
- 1/2 large onion (sliced into thin, quarter moon slices)
- 8 ounces sliced mushrooms
- 1 pound ground beef
- 1/2 tsp salt
- 1/4 tsp pepper
- 2 cloves minced garlic
- 3/4 cup beef bone broth
- 2 TBLS coconut aminos (optional)
- 1/2 cup sour cream
- 4 ounces cream cheese
Step-By-Step Instructions
Prep: 5 minutes | Cook: 30 minutes | Servings: 4
- Heat olive oil in a skillet over medium heat. Add onions and mushrooms and sauté about 10 minutes until soft and a browned.
- Remove mixture to a bowl and set aside. Add the ground beef to the skillet and brown. Drain most of the grease (tilt the skillet and spoon the grease into a mug). It's not necessary to remove all the grease. Sprinkle the salt and pepper over the meat.
- Make a well in the center of the meat and add the minced garlic. Sauté until fragrant.
- Add in the broth, coconut aminos (if using) and onion/mushroom mixture (if you plan to mix it in). Bring to a boil then reduce heat and simmer for 5-10 minutes until the liquid has reduced.
- Stir in sour cream and cream cheese and mix until heated through and smooth.
- Serve over spaghetti squash, cauliflower rice or mash
- Enjoy!
