Keto Philly Cheesesteak Casserole: Cuisine HELP

All the flavors of the classic sandwich in a low carb casserole!

One day a week, usually Tuesday or Wednesday, I spend the majority of the day in the kitchen making food for the week.

It makes working a long day at the clinic easier knowing Lee and I can come home and enjoy some keto-friendly food.

This past week I made cream cheese sausage balls, low carb muffins, and this Philly cheesesteak casserole. Lee especially likes this casserole, and I appreciate that it's quick and super easy to make!

How I Make It

I made a few changes to the original recipe that are reflected below and it turned out great! I thinly slice my bell peppers, but when my daughter Rachel makes this for her family she finely dices her peppers. This seems to make the dish more palatable for her five children.

I didn't want to open a whole container of chicken broth for just the small amount needed for this recipe. So instead, I dissolved a chicken bouillon cube in water and used that liquid.

Ingredients

  • 2 lbs Ground Beef
  • 2 tsp Sea Salt
  • 1/2 tsp Black Pepper
  • 3 large Bell Peppers (I used a red, yellow, and green)
  • 1 large Onion, cut in half and then thinly sliced
  • 1/2 TBLS Italian Seasoning
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic Powder
  • 8 oz Cream Cheese
  • 1/2 cup Chicken or Beef Broth
  • 6-8 slices Provolone Cheese

Step-By-Step Instructions

Prep: 5 minutes | Cook: 35 minutes | Servings: 6

  • Preheat oven to 350 degrees
  • Brown ground beef in a large skillet until cooked through. Drain the grease and season with the salt and pepper.
  • Add the peppers, onions, Italian seasoning, paprika, and garlic powder. Sauté for 10-15 minutes until veggies are soft.
  • Add in the cream cheese and broth and stir until melted and incorporated.
  • Transfer mixture into a baking dish and top with the slices of provolone cheese.
  • Bake for 10-15 minutes until cheese is melted.
  • Enjoy!

I made this for supper last night. I did it in my Ninja Foodie, and it worked great! I was able to use the sear saute to brown the meat and veggies. Then I lowered the lid air crisp lid to bake. At the end I used the broil function. Delicious!!! ( AND easy) It should be noted that the provolone cheese slices are not listed on the ingredients.

Made tonite for supper, this is very good, excellent mix of flavors. Freezing leftovers for future!
